Ingredients
  

  • 445 grams all-purpose flour
  • 30 grams baking powder
  • 5 grams salt
  • 96 grams shortening
  • 1.5 cups buttermilk chilled

Method
 

  1. Preheat oven to 475°F. Lightly coat a baking sheet with shortening or line it with parchment paper. Set aside.
  2. Sift together the flour, baking powder, and salt into a large bowl. Cut the shortening into the flour mixture until it is well combined. It should resemble damp sand.
  3. Slowly pour in the buttermilk and fold gently until just mixed. Don't overmix.
  4. Turn the dough out onto a floured surface. Roll out until 1/2-inch thick. Cut out biscuits about 2 inches in diameter.
  5. Bake for 10-12 minutes or until golden.
