Cuisine: American

Ingredients

  • 113 g butter (1 stick = 113 g)
  • 240 g all-purpose flour
  • 400 g granulated sugar
  • 11 g salt
  • 16 g baking powder
  • 488 g whole milk
  • 1-2 pints berries or prepared fruit

Equipment

  • 1 13"x9" baking dish

Method

  1. Preheat the oven to 350°F. Put the butter in a 13"x9" baking dish and place in the oven.
  2. Mix together the flour, sugar, salt, baking powder, and milk.
  3. Once the butter is melted, pour mixture into the dish. Pour the fruit on top of the mixture, but don't work it into the mixture.
  4. Place in the oven and bake for 30-45 minutes or until the top is golden brown and a toothpick comes out clean.

Notes

You can get away with less butter if you are trying to reduce fat since it’s not mixed into the other ingredients. You should be good as long as you use enough to cover the entire interface between the batter and the dish.
The fruit is a range because it’s not mixed into the batter either, so don’t worry about being too exact with measuring it. As the cobbler bakes, the dough will rise over and encase the fruit. Too little fruit, and it will just be a bunch of dough. Too much, and it won’t hold together. But that still leaves a lot of leeway.
