Method
- Combine all the ingredients except the maple syrup in a large pot or saucepan, then bring to a slow boil. Cover and cook over medium heat until tender.
- Uncover the pot and increase the heat to high. Boil the cooking liquid down to a syrupy glaze that coats the carrots, stirring often. Be careful not to scorch.
- Add maple syrup and cook for about 1 minute more, stirring gently to coat the carrots. Add nutmeg.
Notes
You can use parsnips instead of carrots for a change of pace.
