Maple Glazed Carrots

Ingredients
  

  • 450 g carrots peeled and trimmed
  • 28 g butter
  • 0.5 tsp salt
  • 260 g water
  • 1.5 tsp sugar
  • 0.125 tsp white pepper ground
  • 30 g maple syrup
  • 1 pinch nutmeg freshly-grated or ground

Method
 

  1. Combine all the ingredients except the maple syrup in a large pot or saucepan, then bring to a slow boil. Cover and cook over medium heat until tender.
  2. Uncover the pot and increase the heat to high. Boil the cooking liquid down to a syrupy glaze that coats the carrots, stirring often. Be careful not to scorch.
  3. Add maple syrup and cook for about 1 minute more, stirring gently to coat the carrots. Add nutmeg.

Notes

You can use parsnips instead of carrots for a change of pace.
