Ingredients
  

  • 180 g all-purpose flour
  • 0.25 tsp salt
  • 1 tbsp baking powder
  • 113 g butter
  • 300 g sugar
  • 2 eggs
  • 120 g milk
  • 60 g sour cream
  • 1 tsp vanilla extract
  • 330 g blackberries

Equipment

  • 1 Mixer
  • 1 9" x 5" bread pan

Method
 

  1. Preheat oven to 325°F. Grease a bread pan with Crisco or spray cooking oil.
  2. Whisk together the flour, salt, and baking powder in a bowl. Set aside.
  3. Cream the butter, sugar, and eggs with a mixer.
  4. Add flour, milk, sour cream, and vanilla extract. Mix well with a mixer.
  5. Gently fold in blackberries.
  6. Pour batter into the greased pan. Bake for about 1 hour or until a toothpick in the center comes out clean.

Notes

If you use frozen blackberries, make sure they are thawed and drained before adding to the cake.
