Red Lentils with Coconut Milk
This is a quick way to cook some delicious food without spending a lot of money.

- Wash the lentils until the water runs clear. Combine the dry spices in a bowl and set aside. Heat oil in a large pot over medium-high heat until shimmering. Add the dry spices and sauté until fragrant, about 10 seconds. If using spice mix 2: stir in the onion and cook until softened, about 5 minutes. Stir in the garlic and ginger and cook until fragrant, about 30 seconds.
- Stir in the water or vegetable stock, the coconut milk, and the lentils. Bring to a boil and then reduce to a simmer. Cook until the lentil are tender, about 20 minutes.
- Stir in the diced tomatoes. If using spice mix 1: stir in the peanut butter.
