Method
- Clean the pinto beans and let them soak in water overnight or boil them for 30 minutes. Drain the water.
- Add the water and spices. Bring to a boil. Reduce heat and simmer, covered, until beans are tender, about 2 hours. Add salt and pepper to taste.
Notes
You can use more or less water to cook the beans, depending on how soupy you want your beans. Feel free to mix up the spices a bit as well. Consider this a starting point for finding the right flavor for you.
