Method
- Coarsely chop tomatoes. Put in a colander and add salt. Let it sit for 1 hour.
- Add the rest of the ingredients and stir occasionally until flavors are melded.
Notes
A lot of the ingredients are to your taste. Pick the peppers that give you the heat level you want. Don’t include cilantro if you don’t like its flavor. Start with half the sugar and see if you want it sweeter. The main ingredients are the tomatoes and onions, so everything else should be less than those ingredients.
