Ingredients
  

  • 226 g shortening or butter
  • 400 g sugar
  • 2 eggs
  • 315 g applesauce
  • 0.5 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.5 tsp allspice
  • .25 tsp salt
  • 312 g flour divided
  • 2 tsp baking soda
  • 118 g water boiling
  • 80 g raisins
  • 56 g walnuts chopped

Equipment

  • 1 tube pan
  • 1 measuring cup or a similar container for mixing and pouring hot liquids

Method
 

  1. Preheat the oven to 350°F (180°C). Grease and flour the tube pan and set aside. If using butter, let it come to room temperature.
  2. Cream butter or shortening and sugar. Add eggs, one at a time, and applesauce.
  3. Mix in cinnamon, nutmeg, allspice, and salt.
  4. Sift flour into the mixture, saving about one teaspoon.
  5. Mix baking soda and boiling water in a measuring cup. Add to the batter a little at a time.
  6. With the remaining flour, coat the raisins. Fold the raisins and walnuts into the mixture.
  7. Pour the batter into the pan and bake at 350°F (180°C) for 1 hour, or until done.
