Ingredients
  

  • 650 g corn kernels
  • 100 g red onion small-diced
  • 45 g cider vinegar
  • 40 g olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper ground
  • 12 g basil leaves julienned

  • 1 large pot If using fresh corn on the cob
  • 1 large bowl

Method
 

  1. If you are using fresh corn on the cob, allow about 130 g of corn kernels per cob. In a large pot of boiling salted water, cook the corn for 3 minutes. Drain and immerse in ice water to stop the cooking and set the color. When the corn is cool, cut the kernels off the cob, cutting close to the cob.
  2. Toss the corn kernels in a large bowl with the red onion, vinegar, olive oil, salt, and pepper. Just before serving, toss in the fresh basil. Adjust seasonings to taste.
