Ingredients
  

  • 700 g small cauliflower florets
  • 3 plum tomatoes chopped
  • 50 g olive oil
  • 2 cloves garlic minced
  • 1.5 tsp cumin seeds
  • 0.25 tsp turmeric
  • pinch cayenne
  • 0.5 tsp salt
  • black pepper ground, to taste
  • lemon juice to taste
  • cilantro chopped, to taste

Equipment

  • 1 baking sheet lined with parchment paper for easy cleanup

Method
 

  1. Toss cauliflower florets and chopped plum tomatoes with olive oil, minced garlic, cumin seeds, turmeric, cayenne, salt, and pepper on a baking sheet.
  2. Roast in a 450°F oven for about 25 minutes.
  3. Sprinkle with lemon juice and chopped cilantro.

Notes

We didn’t include amounts for the ground black pepper, lemon juice, or chopped cilantro because they have such a significant impact on the flavor. Some people prefer a lot of pepper or more acidity. Some people can’t stand the taste of cilantro.
