Garlicky Whole Wheat Pasta with Spinach

Ingredients
  

  • 450 g whole wheat linguine
  • 53 g extra-virgin olive oil
  • 6 cloves garlic
  • 250 g mushrooms cleaned and sliced
  • 120 g baby spinach washed
  • 65 g pine nuts
  • 65 g parmesan cheese grated
  • black pepper, to taste

Equipment

  • 1 colander
  • 1 pot for cooking pasta
  • 1 pan for toasting pine nuts and cooking garlic with mushrooms

Method
 

  1. Set a pan over medium heat. Add the pine nuts and toast until fragrant. Set aside.
  2. Cook pasta according to the package instructions.
  3. Add olive oil to the pan. Add garlic and sauté for a few minutes. Add mushrooms and cook until just tender. Set aside.
  4. Place spinach in a colander. When pasta is cooked, pour it with its cooking water over the spinach in the colander. As the pasta drains, its heat will cook the spinach. Transfer the pasta and spinach to a large serving bowl.
  5. Add the mushroom mixture and toss. Top with pine nuts, cheese, and pepper.
